Our Manufactory

Farmed caviar is the ecologically sustainable, low-impact alternative to wild caviar. The caviar produced at our aquaculture manufactory is the first to attain the same high standards as wild-caught caviar. This high quality is due to careful breeding practices on the one hand and top-level processing technology on the other: instead of being kept in mud ponds or intensively farmed recirculating warm-water facilities, our sturgeons are allowed to develop in a number of river-like, open-air canals with an overall length of more than five kilometres. It is these breeding conditions, coupled with farming skills and expertise, that enable us to produce caviar of an exceptional quality.

Our sturgeon reach spawning maturity at the age of eight years at the earliest, by which time they have attained a length of over 1.40 metres and a weight of about 12 kg. The natural environment, proper welfare and management are the requisites for exceptional quality.
