PERLUGA CAVIAR is a unique product which is produced exclusively at our aquaculture manufactory in the Lombardy Region along the principles of sustainable farming practice. These facilities allow our sturgeons to mature naturally under ecological conditions and strict observance of the highest quality standards. Our caviar is freshly harvested at peak maturity and supplied directly to our discerning customers.

PERLUGA CAVIAR - A feast for the senses: our exceedingly pearly roe has firm, pale green to silver-grey granules with a golden-brown sheen and is valued for its unmistakably delicate, nutty flavour.

Only the roe of sturgeons that are handharvested at peak maturity is used for PERLUGA CAVIAR. The optimum stage of maturity of each individual fish is determined by our farming experts. This is the only way to achieve absolutely top quality and an incomparable intensity of flavour.

Our PERLUGA CAVIAR BLACK LABEL stands for the GUBA variety: Acipenser gueldenstaedtii (Russian sturgeon) x Acipenser baeri (Siberian sturgeon). Successful cross-breeding has harnessed the coveted qualities of each of these two superior species of sturgeon.

The roe used for this caviar is pale green to silver-grey with a golden-brown sheen and is somewhat lighter in colour, firmer in texture and richer in flavour than our PERLUGA CAVIAR BLUE LABEL brand.

Our PERLUGA CAVIAR BLUE LABEL stands for the selection of the variety: Acipenser naccarii (Adriatic sturgeon) x Acipenser baeri (Siberian sturgeon). Successful cross-breeding has harnessed the coveted qualities of each of these two superior species of sturgeon.

This caviar is slightly darker and has a more delicious grain and a milder flavour than our PERLUGA CAVIAR BLACK LABEL.
